This dish used to be one of my favorites to take to big family dinners, neighborhood cookouts and potluck dinners because it does feed a bunch! I had totally forgotten about it but ran across it when converting my recipes to a digital cookbook. It’s inexpensive and easy to put together and transport. Kids even like it! I’m taking it to the next party!
2 boxes of frozen chopped broccoli, thawed and drained
1 1/3 cups Minute Rice
1 Can of Sliced Water Chestnuts
1 Can Cream of Mushroom Soup
1 – 8 oz. jar of Cheez Whiz
1/2 cup chopped celery
1/2 cup unsalted butter, melted
1/4 cup chopped onion
Mix the soup, Cheez Whiz and butter, set aside
Combine the broccoli, water chestnuts and celery then spread in a casserole dish
Pour the soup evenly over the top
Bake covered at 350 for 45 minutes or until hot and bubbly.
