Spring Salsa Carnival

Spring Salsa Carnival would be a lovely side dish this spring for outdoor grilled meats or fish like a red snapper. At this time of year the fruits are plentiful. As always, make it as hot/spicy as you like with the chiles you choose to add!

This goes with a lot of dishes and we think you will make this all summer once you’ve tried it!

Salsa Carnival

 

Ingredients:

1 cup of 1/4″ diced cantaloupe

1 cup of 1/4″ diced and seeded watermelon

1 cup of 1/4″ diced seedless cucumber

4 ripe Plum tomatoes, seeded and diced

1/3 cup finely diced red onion

1 teaspoon minced jalapeño – or more to taste!

2 Tablespoons of fresh lime juice

2 Tablespoons of chopped flat leaf parsley

 

Toss in a bowl and let sit in the fridge for at least an hour for flavors to bend. Turn over a couple of times. Serve in a glass bowl or hollowed out watermelon half you just did!
