A nice change of pace for a hot summer day when you don’t feel like cooking a big meal!
The picture shows grilled fish tacos with watermelon salsa, avocado, and jalapeno.
This would be great for using leftover fish, we do it all the time at our house. In fact, we grill an extra piece just for the tacos the next day!
Watermelon Salsa
2 cups seeded finely chopped watermelon
1/2 cup finely chopped peeled cucumber
1/4 cup finely chopped red onion
1/4 cup finely chopped sweet red pepper
1 jalapeno pepper, seeded and minced
1/4 cup minced fresh cilantro
1 tablespoon minced fresh basil
1 tablespoon minced fresh mint
2 tablespoons honey
1 teaspoon lime juice
