With summer quickly approaching, I’m trying to find recipes that aren’t complicated but deliver a ton of flavor and are refreshing to eat – with a ton of heat!!! New Mexico chiles aren’t the only option when it comes to delivering a punch.
This Naked Shrimp Salad is exactly what I’m talking about! Few ingredients, packed with flavor – like all Thai food – and assembles fast! Make it as hot as you wish by substituting chiles like Thai Dragon Peppers. Serve with a nice cold Singha and enjoy!
INGREDIENTS
2 tablespoons lime juice
1 tea spoon fish sauce
1 table spoon peanut oil
1 teaspoon Rice Wine Vinegar
2 teaspoons light brown sugar
1 thinly sliced jalapeno or Serrano chile
1 pound cooked and peeled shrimp
Torn pieces of butter leaf and romaine lettuce
1/2 cup thinly sliced red onion
Seeded and sliced tomato chunks
1 cup seeded and thinly sliced cucumber
1/4 cup mixed chopped fresh basil and cilantro
Mix the first 5 ingredients in a bowl and set aside. This will be the dressing for the salad. When the cooked shrimp is cool, toss with the dressing, lettuce, tomato and onion. Arrange the cucumber around the edge of the plate. Pile the salad in the middle and sprinkle with cilantro. If you can do one of those cool carrot butterflies – I’m envious!
