One of the highlights of our RV travels has always been going to Half Moon Bay to see my Aunt Vera and indulge in her fantastic crab quiche. Coconut Chicken Curry
This dish is super easy to make and is so tasty, you may never go to an Indian or Thai restaurant for curry again! To make it more Indian style, eliminate the coconut milk and coconut water and add a can of crushed tomatoes instead. It's easy to make in your RV galley too because it only uses 1 pan!

February is Potato Lovers Month - and who doesn't love a good potato, whether it's fried, boiled, broiled, grilled, baked, mashed or otherwise cooked?
Other than french fried potatoes, I believe that scalloped or au gratin potatoes are heavenly! There are tons of recipes out there, but here are some fancy scalloped potatoes you might want to try. As we travel far and wide in our Monaco motor home, it's the food of Albuquerque that we miss while on the road. So, I have to take green chile along with us so that we don't go into withdrawals! I love entertaining in our Monaco Knight motor home during our holiday outings. I'm always on the lookout for easy recipes that don't take too much fuss or room to make. The Sweet and Hot New Mexico Pecans are a nice gift too!

Fish Veracruz in Foil
Cook it on the Grill or even in the Campfire!
What you will need is:
Heavy duty foil
Fish filet for each person (not too thick)
Jar(s) of your favorite salsa
Shredded Cheddar Cheese

Here's a simple but addictive dip that's perfect for entertaining in your motor home! You can adjust the heat level by using mild, hot or extra hot New Mexico green chiles.
