Gotta Take the Green Chile Along!
As we travel far and wide in our Monaco motor home, it's the food of Albuquerque that we miss while on the road.  So, I have to take green chile along with us so that we don't go into withdrawals!  You chile heads know what I'm talking about!  The Monaco Monarch has a residential sized refrigerator and freezer so I pack it full of green chile!  I've come up with a couple of dishes that are easy to make and give us our chile fix.

Green chile stew is my husband's favorite.  He makes it with grilled chicken.  So one night he will grill a bunch of chicken breasts and we will save a few for the green chile stew.  If you've never tried it with grilled chicken and fresh corn from the cob before, you don't know what you're missing!  The stew only takes a few minutes to prepare once the chicken is cooked.

Bub's Green Chile Stew
Grilled Chicken Green Chile Stew
4 grilled chicken breasts, diced
3 russet potatoes, diced
2 carrots, diced
1 small red onion diced
2 ears of fresh corn, kernels cut off cob
4 garlic cloves, diced finely
2 Tbs. cooking oil
1 cup of diced green chile - or more!
1/2 cup chopped cilantro - or more if you're a fan
2 cartons of chicken broth
2 tsp. garlic salt

Quickly saute the garlic in the cooking oil but do not brown it.  Add broth and remaining ingredients to the pot except for the chicken and cilantro.  When potatoes are done to your liking - Bub likes his a little firm - add the chicken to the pot.  Cook for 5 more minutes then stir in the cilantro

This makes a 4 quart pot full of green chile goodness!


Another dish I like to make that's super easy is Green Chile Cheeseburger Pie.  It's based on the "Impossibly Easy" pie recipes with Bisquick.  This is good for a quick supper or for a brunch dish.   I like mine topped with a fried egg if I'm having it for brunch!

Green Chile Cheeseburger Pie
1 lb. ground beef or turkey
1 small yellow onion
1 cup chopped green chile
2 cups shredded cheddar cheese
1/2 tsp garlic salt
1/2 cup original Bisquick mix
1 cup milk
2 eggs

Heat oven to 400 degrees. Spray or grease 9" x 13" pan. Brown beef or turkey, add the onion, season with the garlic salt, drain. Spread in the dish; top with the cheese. In a bowl, stir together the Bisquick, milk and egg. Pour over the top of the dish. Bake about 25-30 minutes or until knife inserted in center comes out clean. 6 servings.

I had made the Impossible Easy Pie before a long time ago but never with green chile. This recipe made me want to make it again. I made it blazing hot with some of my Hatch green chiles and it was so good! I will definitely make it again!

I tried the green chile stew with smoked turkey breast and it was outstanding!
