These cookie recipes are perfect for holiday get togethers and the good news is that you don't have to have a big oven to make them in! Just what a RV traveler needs for a small galley.
Birds Nests
1 (12 oz.) chocolate or butterscotch morsels
1 c. Spanish peanuts
1 lg. can Chinese noodles
Melt morsels in microwave; add nuts and noodles. Mix well. Drop rounded teaspoon of mixture on waxed paper lined cookie sheet. Push a spoon in the middle or use your fingers to create a nest. Refrigerate until they harden. Fill middle with more nuts or candy.
Chocolate Rum Balls
3 1/4 cups crushed vanilla wafers
3/4 cup confectioners' sugar
1/4 cup unsweetened cocoa
1 1/2 cups chopped nuts
3 tablespoons light corn syrup
1/2 cup rum
Combine crushed vanilla wafers, 3/4 cup confectioners' sugar, cocoa and nuts. Blend in corn syrup and rum. Shape into 1-inch balls; roll in additional confectioners' sugar. Store in an airtight container several days to develop flavor. Roll again in confectioners' sugar before serving.
Ho-Ho-Ho Snowballs
2 6-ounce packages white chocolate chips
1/4 cup heavy cream
2 tablespoons bourbon or heavy cream
6-ounce package slivered almonds, very finely ground
1-1/2 cup sweetened flaked coconut
Place chocolate chips and cream in a medium bowl set over a pan of hot (not boiling) water; stir until melted and smooth. Stir in bourbon or cream and almonds. Spread in a lightly greased 8"x8" baking pan. Chill for about one hour, until firm. Cut into one-inch squares; roll each square into a ball, then roll in coconut. Keep chilled. Makes about 5 dozen.
