Here are two recipes for easy appetizers that use cream cheese rolled into a log with yummy fillings. Both only take about 15 minutes to put together. For entertaining in your motor home, these recipes are perfect for working in a small galley!
Shrimp Cocktail Cream Cheese Roll
8 ounces cream cheese
1/2 pound shrimp, cooked, peeled and cleaned, then chopped
1/2 cup chili sauce (bottled), and more for serving
2 green onions, chopped
Chop shrimp and set aside 2 tablespoons for garnish. Mix shrimp, half of the green onions and 1/4 cup chili sauce in a small bowl and set aside. Place cream cheese in between two sheets of plastic wrap.
Carefully use a rolling pin to roll out to a rectangle about 10 inches by 8 inches in size. Peel off the top layer of plastic wrap. Spread shrimp mixture over top of cream cheese leaving a half inch around all edges.
Carefully roll cream cheese into a roll, peeling back the plastic as you go.
Cover the roll with plastic wrap and refrigerate for at least 2 hours and up to 24 hours. Unwrap onto a plate. Top with reserved shrimp and chopped green onions. Serve on a plate with extra sauce, crackers and celery pieces.
New Mexican Stuffed Cream Cheese Roll
1 – 8oz. package cream cheese
1 – 4 1/2 oz. can deviled ham
4 oz. chopped green chile
1 TBS. hot horseradish
Dash of Worcestershire sauce
Couple dashes Tabasco
Chunky Salsa
Roll out cream cheese as instructed above. Mix the rest of the ingredients well – except for the chunky salsa and place in the center of the cream cheese. Roll up and place on a serving dish. Cover with the chunky salsa. Garnish with shredded cheddar, chives and black olives. Serve with crackers.
