Slow Cooker On the Border Dip
Here's an easy dip to make for holiday parties that's made and served in a slow cooker.  Since most of us RVers have a slow cooker in motor homes it's a no brainer!


Makes 16 servings (1/4 cup)
Prep Time : 20 minutes



8 ounces bulk Italian sausage
1 small yellow onion, finely chopped
2 - 15 oz. cans of refried black beans
1 1/2 cups shredded Monterey Jack cheese
1 1/2 cups bottled salsa
4oz. chopped green chiles or 1 4 oz. can chopped green chiles, undrained

In a large skillet, cook sausage and onion over medium high heat until meat is brown.  Drain off any fat.  Transfer meat mixture to a 3 1/2 cup or 4-quart slow cooker.  Stir in refried beans, the 1 1/2 cups of cheese, salsa and chile peppers.

Cover and cook on the low heat setting for 3to 4 hours or on high heat for 1 to 1 1/2 hours.

Stir well before serving.  Sprinkle with additional cheese.  Serve with tortilla chips or corn chips.  The scoop variety work well!
