Hotter than Hades Cocktails
If you're the adventuresome type and you love New Mexico hot foods, you will have to try some of these Hot Cocktails! 

Mango-Ginger-Habanero Daiquiri

For the Ginger-Habanero Syrup: 

1 cup sugar

1 habanero chile, seeded

2 oz. fresh ginger, sliced

 

For the 7 Spice Powder:

2 parts each ground cinnamon, ground fennel and ground ginger

1 part each ground Szechuan peppercorns, ground cloves, ground star anise, an ground cardamom

 

For the cocktail:

2 oz. 10 Cane Rum or Cachaca Cane Rum

(this special sugar cane rum from Brazil is easy to find these days.  It's quite different from other rums)

1 oz. freshly squeezed line juice

¾ oz. Ginger-Habanero syrup

¾ oz. mango puree

 7-Spice Powder for garnish

superfine sugar for garnish

Make the syrup:  Combine sugar, 1 cup water, habanero chile and ginger and heat to just before boiling.  Remove from heat and let sit 5 minutes.  Remove chile, cool and strain out ginger.

Make the 7-Spice Powder by combining all spices listed

Make the cocktail: Wet rim of the glass with lime then dip in spice powder and sugar; allow to dry.

 

Combine rum, lime juice, syrup and mango puree in a cocktail shaker.  Shake and strain into a chilled glass.  Garnish with a pinch of spice powder and sugar.


The Hot Flash

1 TBS. salt to rim the glass
1/2 TBS. chipotle powder to rim the glass
1 1/2 oz. Silver Tequila infused with Jalapeno*
1 1/2 oz/ Reposado Tequila
1 oz. Grand Marnier
1 oz. fresh squeezed lime
1 oz. pomegranate juice

Combine salt and chipotle powder to rim the glass.  Moisten rim with lime and roll edge to coat.

In a shaker with ice, mix tequilas, Grand Marnier, lime and pomegranate juice.  Shake well and strain into rimmed glass.

*To make a jalapeno infused tequila, simply slice a jalapeno and drop it into a pint of tequila.  Let marinate at least 24 hours. 


Fire and Ice Martini

Yes, it looks cool but you know what they say about how looks can fool you!

1 oz. fresh watermelon
1/4 tsp. minced habanero pepper
2 tsp. sugar, or to taste
splash of fresh lime juice
1/4 oz. melon infused vodka
1/4 oz. melon infused Crystal Brandy

Muddle the watermelon, habanero, sugar and lime juice.  Pour in vodka and brandy.  Shake with ice and strain into a chilled martini glass.  Garnish with fresh watermelon.
