New Mexican Shrimp and Rice

New Mexican Shrimp and Rice

 

1.5 lbs. Medium sized shrimp

1/2 Cup olive oil

2 onions, sliced thin

4 garlic cloves, sliced thin

2 green chiles

 

Fry all the ingredients except for the shrimp in the olive oil until soft.

 

Then add:

 

2 tsp. Chicken broth

1 can Italian tomatoes

1/2 can tomato paste

1 tsp. Each of salt, paprika, rosemary and oregano

 

Saute shrimp quickly in a little olive oil then add to sauce and simmer until warm.  Serve over white rice.
