This recipe is great for large gatherings like picnics, block parties and pot lucks. It goes wonderfully with grilled meats and fish, baked or fried chicken, or BBQ. It's good all by itself! You can adjust the heat level by adding hotter green chiles.
3 Cups of cold cooked rice
1 - 15 oz. can of pinto beans, rinsed
1 - 15 oz. can of black beans, rinsed
1 - 10 oz. package of frozen peas, thawed
1 cup of sliced celery
1 medium red onion, chopped
1 cup of chopped green chile
1/2 cup of chopped cilantro
1 Recipe of Garlic Dressing
Combine all of the ingredients in a big bowl.
Add the Garlic Dressing and toss gently to mix.
Cover and chill overnight.
Garnish with more cilantro and green chile.

1/3 cup of white wine vinegar
1/4 cup of olive oil
3/4 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. garlic salt
1/2 tsp. pepper
