Fish Veracruz in Foil

Fish Veracruz in Foil
Fish Veracruz in Foil

Cook it on the Grill or even in the Campfire!

What you will need is:

Heavy duty foil

Fish filet for each person (not too thick)

Jar(s) of your favorite salsa

Shredded Cheddar Cheese

Chopped Cilantro

Place fish filet in a double square of the heavy duty foil,

Especially if you’re going to put it in the campfire coals.

Top filet with a good amount of salsa. Then top with the shredded cheese.

Fold the foil square carefully, making sure to completely seal the package.

Place the foil package on the grill over hot coals or high heat on your gas grill.

Bake for approximately  20 - 25 minutes, depending on the thickness of the fish filet.

When ready to serve,  place foil package on a plate and open carefully.

There will be hot steam that could burn you.

Top with chopped cilantro and enjoy!

If you would prefer to cook this indoors, just sauté the filets in a little olive oil and butter until done.  Top with the salsa and then the shredded cheddar cheese.  Put under the broiler until cheese is bubbly hot.  Take out of the broiler and top with chopped cilantro.
