New Mexican Eggs Benedict
with
Green Chile Hollandaise
For a romantic breakfast nothing can compare to Eggs Benedict! The addition of green chiles to the hollandaise is a wonderful twist on a classic. Plus, it's super simple to whip up in your blender.
2 English Muffins, Toasted
2 slices of Canadian Bacon or ham steak if you prefer
4 Poached eggs
Green Chile Hollandaise Sauce
1 stick of butter, melted
1 tablespoon Dijon Mustard
2 tablespoons of lemon juice
2 to 3 green chiles, depending on how hot you want it
Put lemon juice and mustard into a blender. Begin to blend, then start adding melted butter slowly. Add the green chile.
Place english muffin halves on a plate and top each with a slice of the canadian bacon or ham. Place a poached egg on each half then smother it with the green chile hollandaise.
