New Mexican Eggs Benedict with Green Chile Hollandaise

For a romantic breakfast nothing can compare to Eggs Benedict!  The addition of green chiles to the hollandaise is a wonderful twist on a classic.  Plus, it's super simple to whip up in your blender.  There are also special cups available for cooking a perfect poached egg.  This really isn't a complicated dish and is easy to whip up in your RV galley.
 
2 English Muffins, Toasted
2 slices of Canadian Bacon or ham steak if you prefer
4 Poached eggs
 
Green Chile Hollandaise Sauce
 
1 stick of butter, melted
1 tablespoon Dijon Mustard
2 tablespoons of lemon juice
2 to 3 green chiles, depending on how hot you want it
 
Put lemon juice and mustard into a blender.  Begin to blend, then start adding melted butter slowly.  Add the green chile.
 
Place english muffin halves on a plate and top each with a slice of the canadian bacon or ham.   Place a poached egg on each half then smother it with the green chile hollandaise.

OMG! This was incredible! Made it for Father's Day and will make it again soon! Don't know why I didn't think about this before. Now I'm thinking about other things I can add green chile to that you normally wouldn't think about! Thanks for sharing this recipe!
